🍋 Ingredients
Servings: 3 Prep Time: 15 minutes Cook Time: 15–20 minutes Total Time: Approximately 30–35 minutes
3 tsp avocado oil or extra virgin olive oil
3 tbsp fresh lemon juice (adjust to taste)
1½ tsp ground black pepper
1 tbsp fresh lemon zest
1 cup leeks, thinly sliced
9 oz raw boneless, skinless chicken breast (approximately 6 oz cooked), cut into 1½-inch cubes
Nonstick cooking spray
7 cups kale, ribs removed and leaves sliced into strips
👩🍳 Step-by-Step Instructions
Step 1: Prepare the Lemon Pepper Marinade
In a large mixing bowl, whisk together the avocado or olive oil, fresh lemon juice, black pepper, and lemon zest.
Mix until the ingredients are well combined.
Step 2: Marinate the Chicken
Add the cubed chicken breast to the lemon pepper marinade.
Toss until all the chicken pieces are evenly coated.
Set aside while preparing the vegetables. Keep refrigerated if marinating for an extended period.
Step 3: Caramelize the Leeks
Lightly spray a large skillet with nonstick cooking spray and heat over medium-high heat.
Add the thinly sliced leeks and cook for approximately 2 minutes, stirring frequently.
Reduce the heat to low and continue cooking for another 5–6 minutes, or until the leeks soften and turn lightly golden.
Step 4: Cook the Chicken
Increase the heat to medium-high.
Add the marinated chicken and all of the marinade to the skillet with the leeks.
Cook, stirring occasionally, until the chicken is lightly browned and nearly cooked through.
Step 5: Add the Kale
When the chicken is almost finished cooking, add the sliced kale to the skillet.
Toss everything together and cook for approximately 2 additional minutes, or until the kale begins to soften and the chicken reaches an internal temperature of 165°F.
Step 6: Serve and Enjoy!
Remove the skillet from the heat and divide the chicken and kale mixture into three servings.
Serve immediately while warm and enjoy the fresh, tangy lemon pepper flavor!
