It's a wonderful addition to your healthy recipe collection and a creative way to enjoy spaghetti squash!

🍂 Ingredients

Yields: 2 Servings

  • 3 cups cooked spaghetti squash strands (approximately 465 grams)

  • 3 packets Splenda

  • ½ tsp cinnamon

  • ⅛ tsp salt

  • Dash of nutmeg

  • ½ cup Egg Beaters liquid egg substitute

  • Cooking spray for baking dish

👩‍🍳 Step-by-Step Instructions

Step 1: Cook the Spaghetti Squash

Preheat your oven to 350°F.

Carefully slice the spaghetti squash in half lengthwise and remove the seeds and stringy center.

Place both halves cut-side down in a shallow baking pan. Bake for approximately 30 minutes, or until the squash is tender. Larger squash may require additional cooking time.

Allow the squash to cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.

Measure out 3 cups (approximately 465 grams) of cooked spaghetti squash. Save any remaining squash for another recipe.

Time-saving tip: You can also cook spaghetti squash in the microwave until tender.

Step 2: Prepare the Sweet Kugel Mixture

Preheat your oven to 375°F.

In a medium mixing bowl, combine the cooked spaghetti squash, Splenda, cinnamon, salt, nutmeg, and Egg Beaters.

Mix thoroughly until the squash is evenly coated with the sweet, spiced egg mixture.

Step 3: Bake Until Set

Lightly spray a casserole dish with cooking spray.

Pour the spaghetti squash mixture into the prepared dish and spread evenly.

Bake for approximately 35 minutes, or until the center is set.

Step 4: Cool and Serve

Remove from the oven and allow the kugel to cool for approximately 15 minutes.

Serve warm and enjoy the comforting combination of cinnamon, nutmeg, and naturally mild spaghetti squash.

Note: The kugel may release a small amount of moisture when served. This is normal because spaghetti squash naturally contains water.
